FLAVORFUL MEAT LOAF

1 Pound extra-lean ground beef
½ Cup tomato paste
¼ Cup red bell peppers, chopped
¼ Cup green bell peppers, chopped
¼ Cup onion, chopped
1 Cup tomatoes, diced
½ Teaspoon mustard
¼ Teaspoon black ground pepper
½ Teaspoon red ground pepper (cayenne)
2 Garlic cloves, minced
2 Stalks green onions, chopped
½ Teaspoon ground ginger
1/8 Teaspoon ground nutmeg
1 Teaspoon grated orange peel
½ Teaspoon thyme
¼ Cup dry bread crumbs

Mix all ingredients together. Place in 1-pound loaf pan (preferably with drip rack) and bake covered at 350F for 50 minutes. Uncover pan and continue baking for 12 minutes. Serve with vegetables, like green beans, and mashed potatoes, if desired.
