PINEAPPLE SUNDAE

3 Cups low-fat plain yogurt
2 Tablespoons crystallized ginger
1½ Cups mandarin oranges
1½ Cups pineapple chunks
2 Teaspoons vanilla
2 Teaspoons sugar
1 Dash crystallized ginger

Combine the pineapple, oranges, and ginger. Mix well. Combine the yogurt, vanilla, and sugar. In parfait glasses, layer the fruit and yogurt, ending with the yogurt. Sprinkle a pinch of ginger to serve.

Serving size: 1 Parfait glass (1/6 of sundae)
